Sushibar+Wine is Norway’s first MSC- and ASC-certified sushi restaurant

Sushibar+Wine opened its first restaurant in Oslo in March. On 6 May 2020, it became the first Norwegian sushi restaurant to be awarded both the MSC and ASC certificates. The MSC and ASC traceability certificates for seafood demonstrate that the seafood products in our restaurants are traceable and verifiably sourced in a responsible manner.

Sustainability is the basic principle of Sushibar+Wine, and is reflected in all aspects of its operations. MSC and ASC certification provide the world’s most reliable means of assessing responsibility in fish and shellfish production. The MSC environmental label assures consumers that fish and seafood are sourced from sustainable stocks, and that responsible fishing methods have been used throughout. The ASC environmental label verifies that account has been taken of both environmental and social issues in fish and seafood farming.

Sushibar+Wine, which has five restaurants in Helsinki, received the ASC and MSC certificates in Finland in December 2019.

“We follow the green list of the WWF, using sustainably sourced seafood and clean energy while minimising food waste. We also recycle and favour vegan options and organic wines. We are working actively to minimise our footprint, and compensating for what remains,” say Sushibar+Wine entrepreneurs Anders Westerholm and Matti Sarkkinen.

Sushibar+Wine has also begun responsibility cooperation with Moomin Characters Oy Ltd, which is in charge of Moomin copyrights: The Moomin family will feature on Sushibar+Wine’s first children’s menu. 

“Acting responsibly is important for both Sushibar+Wine and the Moomin Characters. We both support the #OURSEA campaign to save the Baltic Sea, the home sea of the Moomins,” says Roleff Kråkström, CEO of Moomin Characters. 

Sushibar+Wine’s long-term interior design partners, Artek and Marimekko, also prefer to use handmade and responsible Nordic design. 

Oslo’s first Sushibar+Wine was only open for a week before the coronavirus crisis escalated in Norway. Throughout the coronavirus pandemic, Sushibar+Wine Posthallen has been selling takeaways, as have the five Sushibar+Wine restaurants in Helsinki.

Norway allowed alcohol to be sold in restaurants again on 8 May. This also marked the opening of Sushibar+Wine Posthallen’s terrace.

“We were able to serve our Norwegian friends for only a week before being stopped by the coronavirus. Now we’re thrilled to be back in business,” says Matti Sarkkinen, one of the two Sushibar+Wine entrepreneurs.

No one has experienced a similar crisis before, but we firmly believe that every cloud has a silver lining. The world has come to a stop and the effects are already visible in nature: waters in Venice are turning crystal clear and dolphins are returning to the canals. The large cities of China are experiencing sunshine as pollution clears and the transportation related emissions in New York have dropped by 50% from last year. The complete stop has been very effective for environmental change and individuals are adapting to the situation. Current flight restrictions could decrease air travel in the future and business travel could slow down for good.

As a carbon neutral company we are happy for the environmental changes, but concerned whether we are possible to provide our services in a post-crisis environment. Evenings spent in restaurants have vanished overnight as people are staying at home. We want to do our part in providing our services even during the crisis and you can order takeaway sushi with our own Sushibar+Wine app or home delivery through Wolt. Wolt has also compensated for their carbon emissions and our whole production chain, whether it’s take away or home delivery, is carbon neutral. The earth will thank us now and in the future. 

The crisis will end eventually and we dearly hope that you will return to our restaurants as soon as it is possible. For the time being you can order takeaway and home delivery.

Norway’s first carbon-neutral sushi restaurant to open

Not many know that sushi and sustainability seldom fit in the same sentence. Sushibar+Wine, a Nordic artisan sushi restaurant chain, wants to make a difference. Sushibar+Wine will be the first carbon-neutral sushi restaurant in the country, opening in Oslo Posthallen next week, 2nd March. 

«It’s tricky for restaurants to achieve a carbon-neutral value chain because of the limited power they have over their suppliers. We need change across the entire food and agriculture sector. Sushibar+Wine is showing how restaurants can take climate action, right now. First, they became the first sushi restaurant in Finland and Norway to be granted the highly respected ASC/MSC Chain of Custody certificate. Now they went one step further, becoming 100% carbon-neutral. We hope many more will follow this shining initiative of climate action,” says Anna Lemström, Business Dev. Manager at South Pole, a leading global sustainability solutions provider. 

Sushibar+Wine also follows WWF green traffic light recommendations* for responsible fish sourcing. Opening two new restaurants in Oslo will allow them to be even closer to the main ingredients such as the sustainably grown Norwegian salmon. 

“For us, sustainability isn’t a single action but a fundamental principle across all our operations, such using sustainable ingredients, purchasing clean energy, minimizing food waste, recycling everything, favouring vegan options and organic wines, cleaning with eco-friendly detergents, and so on. And the emissions we simply cannot cut, we compensate*,” explain the entrepreneurs of Sushibar+Wine, Anders Westerholm and Matti Sarkkinen

The restaurant’s Nordic aesthetics are provided by Artek and Marimekko, companies who share the Sushibar+Wine values of handmade, sustainable & Nordic design.

The first Sushibar+Wine restaurant in Oslo Posthallen on Prinsens Gate will open on Monday, the 2nd of March, followed by a second one in Bogstadveien in May. 

*Our emissions for the year 2020 are compensated via participation in a forest conservation project in Isangi, Congo, protecting one of the Earth’s most biodiverse rainforest from deforestation.
